– 1 cup red lentils

– 1 onion, diced

– 3 cloves garlic, minced

– 1 thumb-sized ginger, grated

– 1 tablespoon curry powder

– 1 teaspoon cumin

– 1 teaspoon paprika

– 1/2 teaspoon turmeric

– 1/4 teaspoon cayenne pepper (adjust to taste)

– 1 can (14 oz) coconut milk

– 1 can (14 oz) diced tomatoes

– 2 cups vegetable broth

– 2 cups spinach

– Juice of 1 lime

– Fresh cilantro, chopped (for garnish)

– Salt and pepper to taste

– Cooked rice or naan bread (for serving)


1. Rinse the red lentils under cold water and set aside.

2. In a large pot, sauté the diced onion, minced garlic, and grated ginger over medium heat until fragrant and lightly browned.

3. Add the curry powder, cumin, paprika, turmeric, and cayenne pepper to the pot. Stir well to coat the onion mixture with the spices.

4. Pour in the coconut milk, diced tomatoes (with their juices), and vegetable broth. Stir to combine everything.

5. Add the rinsed red lentils to the pot and bring the mixture to a boil. Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 20-25 minutes, or until the lentils are tender and cooked through.

6. Stir in the spinach and lime juice. Cook for another 2-3 minutes, or until the spinach has wilted.

7. Season the curry with salt and pepper to taste.
