Was kind of a long day..so “Savory Garlic Roasted Potatoes with Herbs” are saving my evening. Hope yours too:

Here’s how you can make them:

Ingredients:

– 4 large potatoes, washed and cubed

– 4 cloves of garlic, minced

– 2 tablespoons of olive oil

– 1 teaspoon of dried thyme

– 1 teaspoon of dried rosemary

– Salt and pepper to taste

Instructions:

1. Preheat your oven to 425°F (220°C).

2. In a large bowl, combine the cubed potatoes, minced garlic, olive oil, dried thyme, dried rosemary, salt, and pepper. Mix well, making sure all the potatoes are coated with the seasonings.

3. Spread the potato mixture in a single layer on a baking sheet.

4. Place the baking sheet in the preheated oven and roast for about 25-30 minutes, or until the potatoes are crispy and golden brown. Make sure to flip the potatoes halfway through for even roasting.

5. Once the potatoes are done, remove them from the oven and let them cool slightly before serving.
