– 1 cup sliced zucchini
– 1 cup sliced mushrooms
– 1 cup sliced red onions
– 1 cup sliced cherry tomatoes
– 2 cloves garlic, minced
– 2 tablespoons olive oil
– 1 tablespoon soy sauce
– 1 teaspoon smoked paprika
– 1 teaspoon cumin
– Salt and pepper to taste
– Fresh cilantro, for garnish

1. Preheat your oven to 400°F (200°C).
2. In a large bowl, toss together the diced bell peppers, sliced zucchini, mushrooms, red onions, and cherry tomatoes.
3. In a small bowl, whisk together the minced garlic, olive oil, soy sauce, smoked paprika, cumin, salt, and pepper.
