Today – Recipe Name: Veggie Protein Power Bowl

– 1 cup quinoa
– 1 ¾ cups vegetable broth
– 1 tablespoon olive oil
– 1 onion, diced
– 2 cloves garlic, minced
– 1 bell pepper, sliced
– 1 zucchini, sliced
– 1 cup chopped broccoli
– 1 cup diced tomatoes
– 1 cup cooked chickpeas
– 2 tablespoons soy sauce
– 1 tablespoon nutritional yeast
– 1 teaspoon smoked paprika
– Salt and pepper, to taste

1. Rinse quinoa under cold water and drain well. In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork and set aside.
2. In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until fragrant and translucent.
3. Add bell pepper, zucchini, broccoli, and diced tomatoes to the skillet. Cook until vegetables are tender-crisp.
4. Stir in cooked quinoa and cooked chickpeas. Season with soy sauce, nutritional yeast, smoked paprika, salt, and pepper. Mix well, ensuring everything is evenly coated. Cook for an additional 2-3 minutes to heat through.
5. Serve the Veggie Protein Power Bowl hot and enjoy!
